• Baking Powder Biscuits •

"Everything is ready, Diana, except my cake which I'm to make in the morning, and the baking-powder biscuits which Marilla will make just before teatime." Anne of Green Gables, XXI.


*Note* Results may vary

- 2 cups sifted flour
- 2 teaspoons baking powder
- 4 tablespoons butter or shortening
- 1/2 teaspoon salt
- ~ 3/4 cup milk

1) Sift flour once and measure.

2) Add baking powder and salt, then sift again.

3) Cut butter/shortening and rub it into flour.

4) Add milk gradually and stir until soft dough is formed.

5) Knead for 30 seconds to shape on slightly floured board.

6) Roll 1/2 inch thick and cut with 2 inch floured biscuit cutter.

7) Bake on ungreased sheet in a 400 degree oven for 12-15 minutes.

Makes 12 biscuits.
