• Lemon Biscuits •

"There's a hot chicken pie for supper and I made some of my lemon biscuits for you. You needn't be a mite afraid to sleep in that bed." (Rachel Lynde) Anne of Ingleside, I.

- three 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 3/4 cup butter
- melted one 1/4 cups white sugar
- 1/4 teaspoon lemon extract
- 2 eggs

1) Preheat oven to 375 degrees F (190 degrees C) and grease baking sheets.

2) Sift together dry ingredients.

3) Mix together butter (melted), sugar and extract. Beat in eggs.

4) Roll dough about 1/8 inch thick on a lightly floured board.

5) Cut into squares or rounds and place 1 inch apart on cookie sheet. Sprinkle with granulated sugar.

6) Bake for 10 to 12 minutes, or until golden.
