• Taffy •

"After tea Diana and I made taffy. The taffy wasn't very good, I suppose because neither Diana nor I had ever made any before. Diana left me to stir it while she buttered the plates and I forgot and let it burn; and then when we set it out on the platform to cool the cat walked over one plate and that had to be thrown away. But the making of it was splendid fun." Anne of Green Gables, XVIII.

- 1/2 cup butter
- 48 large marshmallows
- 1 tablespoon water
- 1/2 teaspoon salt
- 2 cups (12 ounces) butterscotch chips

1) In a heavy saucepan, combine butter, marshmallows, water and salt.

2) Cook and stir over low heat until smooth.

3) Add chips; stir until melted.

4) Pour into a buttered 8-inch square baking pan; cool.

5) Cut into 1-inch squares. Wrap individually in waxed paper; twist ends.

Yields about 5 dozen.
